I am sure people are probably wondering if we went to Quebec more than once this year because of all the nachos. I can assure you all these nachos are from one special week in 2023! That was A LOT of nachos and this is not yet the last entry for that Quebec trip. There was such a wide variety of nachos and it was a great trip for nacho research. Pub des Borgia is located in old Quebec City and it is at the bottom of the steep set of stairs called Escalier Casse-Cou (Breakneck Stairs), and also at the bottom of the Funiculaire.

Distribution of Toppings
Pub des Borgia had pretty good distribution of toppings. There were a lot of toppings to go with every round chip. No picture with leftover bare chips required for this place!
Quality
There was a lot of mozzarella cheese to go with the smoked meat and they went well together. I should note that we did ask the server for extra cheese when we were ordering our nachos. As you may be able to see from the picture, there was plenty of cheese. In addition, the nachos had a great toast factor and I loved how there was a lot of smoked meat to go on top. There were some hot banana peppers which gave them that extra spice. Normally I would not like nachos that had just one type of cheese or that had round chips but it really seemed to work here.
Quantity
This was sufficient to share for lunch.
Value
The smoked meat nachos are $21.75 and if you order extra cheese it is $3 extra. I think the value is very fair considering the quality of the nachos and that we were in a very touristy part of old Quebec City.
Service
It was evident that the servers did not want to be there and that gave us a bit of a bad vibe while we were there.
Conclusion
If you have read through the blog, you will know that my favorite things to see on a tray of nachos would be triangular chips, a blend of cheeses (stretchy and sharp), steak pieces, and spices - all delivered with great service. Pub des Borgia did not fit within my concepts for an ideal plate of nachos, but I still thought the quality and taste was pretty good. The big negative was that I felt like I was inconveniencing them by being there and paying for their food. I think I would go back to Archibald (a place with a lower nacho rating) over this place and it all comes down to the vibe.
